Located on the 10th floor of an office building and accessed via a parking lot and lift, Suramare serves up a host of flavourful dishes and quirky drinks. The Vietnamese shrimp and beef tartare are extremely popular along with the Tropic Spice cocktail, which is made up of chilli-infused vodka, mango and lime. Complemented by its stylish, plant-heavy design and unparalleled views of the city’s skyline from its glass-enclosed rooftop, Suramare will not fail to dazzle you.

This stylish rooftop bar is found on Rothschild Boulevard in the centre of Lev Ha’ir. Speakeasy boasts a chic indoor lounge adorned with eye-catching art and a large outdoor terrace, making it a great spot to sit down with friends or a date. The highlight on Speakeasy’s vast spirits and cocktails menu is the Bitter Sweet Symphony, which is made with Campari, ouzo, vermouth bianco, pineapple sorbet, hibiscus and lime. Its food menu is equally impressive – try the spicy shrimp in a handmade pita or the sea fish sashimi.

Renowned for being the in-spot in Tel Aviv, this restaurant-bar’s intimate courtyard and stylish second-floor cocktail bar make it a great place for soaking up the city’s vibrant nightlife. Built around two towering trees, with one illuminated by small lights at night, and greenery cascading down its walls, Café Europa oozes charm. Expect plenty of creative seafood dishes and expertly crafted cocktails, from classics to the bar’s own special mixes – its refreshing cucumber-based Green Gin is delicious.

Locals flock to rooftop bar The Prince for its cool, unpretentious vibes and traditional setting. Here you’ll find an array of refreshing cocktails that change seasonally, as well as first-class food (try the eggplant fries and minute-steak sliders). If you’re strapped for cash, head to The Prince during happy hour (55 Israeli new shekels (£12) for a cocktail and a dish until 8pm) while soaking up the city’s buzzing atmosphere.

Many come to this establishment for its fine-dining experience from one of Tel Aviv‘s most innovative chefs, but it would be a shame not to visit its high-end cocktail bar downstairs. Aria Lounge boasts an enticing selection of cocktails, all made by expert mixologists. We recommend the sweet-and-sour Around the World, a concoction of flavours from pineapple-scented Caribbean rum to French vermouth and Israeli honey. The establishment also hosts regular live DJ performances from local and international musicians, with parties often going on until the early hours.

Nilus

Nilus – named after the River Nile – is one of the trendiest nightspots on the busy Allenby Street. Housed in what used to be a British hotel during the Mandate period, Nilus has a retro design that features a spiralling staircase, wooden furniture and plenty of flowers. The bar has a slightly older yet nonetheless hipster crowd (typically late 20s and upwards) and a classy, throwback atmosphere. Nilus is perfect for enjoying a cocktail and small dinner bites.
